A rattlesnake bite is a hot dog that has been scored to look like a rattlesnake tail, which I will admit sounds insane when written down. It is not insane. The cuts are the whole point—without them you have a hot dog, which is fine, but with them you have something the dry rub and brown sugar can actually get into, and the difference between those two outcomes is significant enough that people at parties will set down their drinks to ask you about it.
Cover them in the dry rub, cook them through, then hit them with the caramel sauce in the last ten minutes the same way you would for the Baby Backs—the recipe is on this website, listed under Dad’s Dry Rub, a name I did not choose and cannot change. Pull them and toss immediately in the Bourbon Barbeque Sauce, also on this website, also not my fault. What you will end up with is something that looks like a party trick and tastes like you meant it.

Directions
- Partially slice in the hotdogs, first on both sides lengthwise, then across both sides width wise.
- Then cut the hotdogs into small bites, maybe 3 per hot dog.
- Cover exactly as indicated on Dad’s Dry Rub recipe and grill.
- When done remember to cover them with caramel sauce and leave warm on the grill 10 minutes.
- Then toss them in warm Bourbon Barbeque Sauce and serve with toothpicks as an appetizer.
