Delish Fried Chicken Sandwich

We constantly grappled with the challenge of crafting the perfect fried chicken for sandwiches, experimenting and tweaking until we stumbled across a series of inspiring recipes. By merging these discoveries with our own expertise in creating truly remarkable flavors, we developed this exceptional recipe. The chicken is fried to golden perfection, its crispy exterior giving way to juicy, tender meat inside. The seasoning, a harmonious blend of spices, elevates each bite to a new level of deliciousness.

Start this recipe 10 -14 hours before serving, since you will marinade the chicken for 12 hours. We do this just before bed if we want to have this for lunch, or when we first get up is we want it for dinner.

Ingredients

  • 6 Sweet Hawaiian Burger Buns (Brioche or Potato can also work)
  • 3 Skinless/Boneless Chicken Breasts
  • 3 1/2 Cups Flour
  • 2 Cups Buttermilk
  • 1 Chopped Shallot
  • 2 Garlic Cloves Chopped
  • 1 Chopped Jalapeno Pepper
  • 2 Tablespoons Kosher Salt
  • 1 Tablespoon Black Pepper
  • 4 Teaspoons Baking Powder
  • 1 Tablespoon Morton’s Seasoning Salt
  • 1 Tablespoon Smoked Paprika
  • 1 Teaspoon Cayenne Pepper
  • 1 Teaspoon Celery Salt
  • 80 Ounces or so on Canola Oil for Frying
  • Bibb Lettuce
  • Famous Dave’s Sweet and Spicy Pickles Chips
  • Seasoned Mayo (recipe available on this website)

Directions

  1. Make a chicken marinade by combining the buttermilk, jalapeno, garlic, shallots, 2 teaspoons of kosher salt, 1 teaspoon of Morton’s Seasoning Salt and 1 teaspoon of black pepper.
  2. Pound the chicken breasts out between parchment paper.
  3. When you have them about 1/2 of an inch thick, no more, cut each breast in half.
  4. Put the chicken in a plastic container with the marinade and leave it in the refrigerator for 12 hours.
  5. When you actually cook, preheat the oven to 300 degrees.
  6. Whisk the flour, baking powder paprika, cayenne, celery salt, 2 Teaspoons of Kosher salt, 1 teaspoon of Morton’s Seasoning salt and 1 1/2 teaspoon of black pepper together in a bowl.
  7. Put 2 inches of oil in a frying pot.
  8. Use a frying thermometer, heat the oil to 350 degrees.
  9. Take the chicken from the marinade and dredge it in the flour mix, then back to the marinade and then back to flour. Then lay it out on your board until you are ready to fry.
  10. When the oil is at 350 degrees fry the chicken 2 or 3 at a time until golden brown.
  11. Put the breasts on a sheet pan, sprinkle them with salt, and keep them  warm in the preheated oven.
  12. Put Seasoned Mayo on the bottom of bun with the Bibb lettuce leaf and pickle chips on the bottom.
  13. Place the chicken breast on top an spread more mayo on the top side of the buns, and serve.
