Skillet Mushrooms

Mushrooms are one of our very favorite vegetables. Unfortunately, many people do not like this delicious side, often because they have never had them properly prepared. This side goes perfectly with steaks in particular. In addition, we occasionally like our steaks Oscar style, covered in hollandaise or béarnaise sauce. We much prefer mushrooms cooked in the following fashion to the typical asparagus, crab or other ingredients found in Oscar recipes.

4 Ounces Whole Baby Bella Mushrooms

1 Teaspoon of Kosher Salt

1/2 Teaspoon Black Pepper

1 Teaspoon Onion Powder

1 Tablespoon White Wine

1 Teaspoon Fresh Basil

2 Cloves of Minced Garlic

1/2 Teaspoon Fresh Thyme

1 Tablespoon Chopped Fresh Parsley

3 Tablespoons of Unsalted Butter

Directions

  1. Cut mushrooms in half. Do not slice them or buy pre-sliced mushrooms by mistake.
  2. Add butter to a skillet and melt the butter.
  3. Add all other ingredients and sauté the mushrooms. Do not add more than 4 ounces of mushrooms unless you have a very large skillet. They come in 8 ounce packages typically. If you add the whole package you will crowd the mushrooms. They will then boil in their own liquid rather than sauté. This is a common mistake and how mushrooms often are not properly prepared at home.
  4. Sauté the mushrooms and stir them in the skillet for around 10 minutes. It is very hard to overcook mushrooms. You want a slight caramelization.
